Dry-roasting (air-drying, dehydrating, too!) are all ways to remove moisture from ingredients. This process turns raw (or cooked) ingredients shelf-stable and ready-to-devour. Dehydration retains 50-60% of those beautiful, oh-so-delicious whole food vitamins and minerals, miles ahead of processes like extrusion used to make dry foods like kibble.
